The Old Traditional Extra Virgin Olive Oil is the feather in the cap of the production of the Oleificio Polla; it is produced in small quantities as its processing is very complex and onerous.
Two old Ligurian processing methods are used: "a s'ciapa", meaning that the milling is done with the stone wheels slightly raised, in order to crush the olive without breaking the stone; "u'dritu", which indicates that the oil is obtained through the dripping from the stacked cord "fiscoli" (round pads) after the kneaded paste has been spread with no other grinding. The strong points in terms of quality are given by the delicacy obtained through the milling of the paste alone, without the stone's tannins, and by the lack of the mechanical action of the hydraulic presses. Since 1875. The Polla Family has been producing in its own oil-mil in Liguria since 1875. In the first years of the 20th century, Nicoḷ Polla opens the Loano's premises. Nicoḷ's heirs still produce an excellent olive oil in the old oil-mil in Toirano, fully respecting the old traditions.
