It is an extra virgin olive oil obtained from Taggiasca olives, produced with the traditional method of cold pressing.
Bottled must, in order to better appreciate the hints of olives coming exclusively from our Taggiasca variety. The crop grows at heights ranging from 400 to 900 meters above sea level in order to preserve the trees from the attacks of the oil fly and the hot temperatures in summer.
It is a delicately fruity, sweet oil with hints of slightly herbaceous artichoke and, normally is very sweet. Rich in polyphenols and nutraceuticals, keeps an acidity between 0.2 and 0.25 and it is able to satisfy the most demanding palates.
We recommend using the Mosto to dress all courses especially on fish, shellfish, and salads.
